14 tips and tricks about the thermomix recipe
- Use fresh eggs to beat the egg whites. Fresh eggs will have a better texture and will result in lighter floating islands.
- Make sure the bowl and whisk of the Thermomix are perfectly clean and free from any greasy residue. Any residue could prevent the egg whites from properly beating.
- Add a pinch of salt to the egg whites before beating them. The salt will help stabilize the whites and achieve a firmer texture.
- Use whole milk to cook the floating islands. Whole milk will give a creamier texture and a richer taste.
- To flavor the milk, you can add a split vanilla bean or some lemon zest. This will add a delicate flavor to the floating islands.
- Check the temperature of the sweetened milk before adding the egg whites. It should not be too hot, otherwise the whites may cook and become rubbery.
- When shaping the floating islands, use a lightly oiled tablespoon to facilitate shaping the egg white balls.
- To prevent the floating islands from sticking to the bottom of the bowl, you can cook them in pre-greased individual molds.
- If you want a lighter custard, you can replace some of the milk with heavy cream. This will give a creamier texture.
- Let the floating islands cool completely before unmolding them. This will make them easier to handle without damaging them.
- For an even more indulgent dessert, you can add a touch of caramel or fruit coulis on top of the floating islands before serving.
- If you're preparing the floating islands in advance, store them in the refrigerator for a few hours before serving. They will be even better after resting.
- If you want to add a crunchy element, you can sprinkle the floating islands with some slivered almonds or crushed hazelnuts before serving.
- Present the floating islands in beautiful individual bowls and decorate them with a mint leaf or lemon zest for an elegant presentation.
