Mascarpone cream :
375g mascarpone
100g sugar
3 eggs
1 pinch of salt
Strawberry coulis :
200g strawberries
2 tbsp water
1 tbsp powdered sugar
1 tbsp lemon juice
For assembly :
400g strawberries
10 ladyfinger biscuits

15 tips and tricks about the thermomix recipe
- Choose ripe strawberries : Opt for ripe and sweet strawberries for optimal flavor.
- Add fresh lemon juice : Add a few drops of fresh lemon juice to enhance their natural flavor.
- Use room temperature mascarpone : Take the mascarpone out of the refrigerator in advance so that it is easier to mix and incorporate.
- Separate the egg whites from the yolks carefully : Be careful not to leave any traces of egg yolk in the whites, otherwise they will not whip properly.
- Beat the egg whites until stiff peaks form : Beat the egg whites until they are stiff to give lightness to the mascarpone cream.
- Add a pinch of salt to the egg whites : A pinch of salt will help stabilize the egg whites and achieve a better texture.
- Let the tiramisu rest in the refrigerator before serving : Let the tiramisu rest for at least 4 hours (or overnight) in the refrigerator so that the flavors blend and the texture stabilizes.
- Sprinkle cocoa powder just before serving : Sprinkle cocoa powder on top of the tiramisu just before serving for an elegant presentation.
